2025 St Huberts Yarra Valley Pinot Noir - NEW!

Given the hot vintage, we blended in around 20% Upper Yarra for some restraint and perfume. Around 50% Valley floor and 30% Lower Yarra hillside slopes.

Open pot fermented warm to hot – a little whole bunch here and there. Pressed just before dryness for a partial barrel fermentation, some time on lees, and a lick of good French oak add complexity.

Most importantly - our Pinot looks like a Pinot (not dry red) and shows regional character.

Palate - The wine is light-medium bodied, even and textural. Vibrant cherries and oak mesh on the palate. Supple tannins support throughout and make for an expansive finish. A Pinot that doesn’t reflect a hot vintage.

Nose - Classic Yarra Valley cherry fruit characters dominate along with red jelly crystals and graphite notes. Background hints of blood plums and dark chocolate with savory forest floor scents. Spicey oak frames the wine.

Maturation - Matured for eight months in 100% French oak barriques, with around 24% new.
