2025 St Hubert's Limited Release Mornington Peninsula Pinot Noir

This single vineyard wine was sourced from Coolart Creek property at Merricks on the Mornington Peninsula. A mix of around 50:50 667 and Pommard clones were handpicked and partially destemmed, leaving around 20% whole bunches in the open pot ferment. Pressed off to French oak (just before dryness) for a little barrel fermentation then further matured on lees.
NOSE - Perfumed, complex and layered. Dark pastels, cherries and raspberry jam. Graphite, mineral notes, savoury spice, whole bunch stem and stalk, with hints of funk and oak.
PALATE - The wine is generous yet proportioned. Even with lovely density, texture and detail. Vibrant red and blue fruits, savoury notes and terrific length. (A new vineyard, but a family resemblance to the 2023.)
