2017 St Hubert's Sparkling Rosé - Silver June Shipment

First made in 2015, St Huberts Sparkling Rose adds some fun to our “serious sparkling” range. A single block wine from the Solitude vineyard in the Upper Yarra Valley, Pinot Noir is the dominant variety, and along with this comes the fruit power and mid palate. The expedition liqueur rate on dosage was selected for balanced sweetness, faint rosé colour and subtle berry aromas. Handpicked fruit was gently whole-bunch pressed, and the base wine was fermented in its bottle in the traditional method. The wine had over eight years on lees prior to disgorging, then some time on cork before release.
COLOUR - Pale salmon/onion skin with a fine, steady bead.
NOSE - Aromas of pink grapefruit, pomegranate and red currants combine with yeasty notes of biscuit and pastries.
PALATE - Expansive mousse on entry precedes a generous yet clean-cut palate. Red fruits give vibrancy to the wine and age gives subtle toast and nutty flavours. The dosage adds freshness, balance and fine phenolics. Fleshy and crisp, with a dry finish.
FOOD MATCH – Blini with smoked salmon, crème fraîche and dill.
Drink now to enjoy vibrant varietal flavours, or allow depth and complexity to grow over the next five to ten years or so.
