St Huberts Pinot is usually designed to be a 'fuller' style Yarra Pinot, with more depth and concentration than many of our local brethren. This wine is a single vineyard wine from Justin Fahey’s property on the Yarra Valley floor. 100% 115 clone, with around 14% whole bunch. Pressed just before dryness for a little barrel fermentation, some time on lees, and a lick of good French oak add complexity. Most importantly - our Pinot looks like a Pinot (not dry red) and shows regional character.
Palate - The wine is light-medium bodied, lively and textural. Not quite nervous acidity – but a wound-up palate. Cherries and red fruits with savoury spice. Stalk tannins add a faint grip on the finish. “A wine that shows the mild La Niña vintage.”
Nose - Plenty of funk and whole bunch. A gamey number with vibrant black cherries and blood plums. Spicey oak frames the wine.
Maturation - Matured for nine months in 100% French oak barriques, with around 28% new.
