We were so excited to get our hands on this fruit…! A single vineyard wine grown at the renowned Robinson vineyard at Tuerong on the Mornington Peninsula. Handpicked fruit was gently destemmed to an open “pot” fermenter. A portion (around 15%) whole bunch was added to the ferment. Pressed just prior to dryness for some barrel fermentation, then maturation in French oak barriques for around 9 months. A “smaller” wine in the St Hubert’s Pinot portfolio, but a wine of lovely fragrance, complexity and length.
Nose - Restrained, complex and layered. Red pastels, red cherries and lots of goodies… Graphite, forest floor, wet rock, smoky spice, whole bunch stem with hints of funk and oak.
Palate - The wine is light and slippery, with excellent proportion. Very even, with lovely texture and detail. Red fruits, savoury spice and terrific length. (A big Burgundy glass will be a magnifying glass to the perfume…)
Food Match - Peking Duck, Mushroom Risotto

"Soft and silky. Not large framed, but complex and beautifully proportioned. Savoury cherries and graphite follow from the nose with an expansive “peacocks tail” on the finish."
