2021 St Huberts Cellar Reserve Cabernet Sauvignon
St Hubert’s has an extended history with Cabernet Sauvignon, with the variety long being the flagship for the brand. Our Cellar Reserve represents the finest parcels from the vintage. A mix of fermentation in open pots (pressed early) and closed static (with extended maceration) provide blending options with different aromatics and tannin profiles. Our aim is to produce a wine true to the regional style while highlighting Cabernet Sauvignon's varietal characters.
Matured for 13 months: 100% French oak barriques, with around 38% new.
Drink now to enjoy vibrant varietal flavours, or allow depth and complexity to grow over the next ten years or so.
